New to this seasonal spring treat? Pea shoots
are delicate and sweet, and taste like the pea pods themselves. They're great raw in salads, as a swap for lettuce on a sandwich, in egg scrambles or frittatas, or using them as a pretty, edible garnish. Unlike pea sprouts, these leaves and tendrils are grown in the soil. (Sprouts, with their long stems and tiny leaves, are actually sprouted peas grown in water.) They truly taste like spring!
