Chicken Backs for Soup and Pulled Chicken

Whole animal cooking is becoming more and more popular, not only because the cost of meat is steadily rising but also to reduce waste. When we buy those convenient packages of boneless skinless chicken breasts and leg/thigh portions, what is left over are very useful chicken backs.

Here is a great site that walks you through exactly how to use these to make very nutritious and nutrient dense chicken stock, as well as when to pull them out in order to make use of the surprising amount of tasty meat the backs have.

Spring Spotlight: Pea Shoots


New to this seasonal spring treat? Pea shoots are delicate and sweet, and taste like the pea pods themselves. They're great raw in salads, as a swap for lettuce on a sandwich, in egg scrambles or frittatas, or using them as a pretty, edible garnish. Unlike pea sprouts, these leaves and tendrils are grown in the soil. (Sprouts, with their long stems and tiny leaves, are actually sprouted peas grown in water.) They truly taste like spring!

Here is some inspiration for the good old staple green that we all love - spinach! Spinach is so versatile. Wilted, sautéed, braised, steamed, or raw you can work it into just about any recipe to add some extra nutrients. My favorite to get the kids to eat, sneak it into pasta (or better yet quinoa mac & cheese and replace the pasta too!) or meatballs.

Instead of an evening in a crowded restaurant with overpriced sub par food, cook at home for Valentine's Day this year. There is no better way to show someone how much you care than with a home cooked meal made with love! With high quality ingredients, this simple meal is sure to be delicious. And super simple, even if you don't consider yourself a cook!



Knowing how to cook a great steak is an awesome skill to have that you'll use again and again. The trick is: take your meat out of the fridge at least 30 minutes before you cook it! Cold meat thrown into a hot pain = tough meat. Tip # 2: If you aren't familiar with how to tell when a steak is rare, medium, well done, get yourself a reliable meat thermometer. A tip specific to the 100% grass fed beef we have here at Annie's Acres Farm: cook it a little under what you would order at a restaurant. The beef tends to become tougher if overcooked than a grain fed beef steak would.

Roasted Garlic Potato Soup


This soup is absolutely delicious, and I can't think of anything better to eat on a cold winter day!  Such an easy, healthy comfort food recipe.  We still have lots of potatoes and garlic available in the shop here at Annie's Acres Farm.
