Here is some inspiration for the good old staple green that we all love - spinach! Spinach is so versatile. Wilted, sautéed, braised, steamed, or raw you can work it into just about any recipe to add some extra nutrients. My favorite to get the kids to eat, sneak it into pasta (or better yet quinoa mac & cheese and replace the pasta too!) or meatballs.
